The brand new line of special flours includes flours obtained from the milling of different varieties of cereals with peculiar nutritional characteristics.
These flours are particularly rich in fiber, vitamins, proteins and mineral salts and lend themselves to various uses in the kitchen.
The burnt wheat flour is obtained from the toasting of durum wheat (Tritucum durum) which is then ground. It is a product originating in Puglia. This gray colored flour with a very aromatic, almost smoky flavor is used for preparations such as focaccia, bread and pasta, mixed with soft wheat flour.
