Mode 'of Use:
Great for the preparation of traditional Neapolitan pizza with medium and long leavening. Excellent also for bread and pastry yeast (Panettone, Pandoro, pastries ...).
Use a more or less refined type does not change the intended use, but rather only the flavor profile and the final appearance (less refined flours tend to rise less but to be tastier than refined). Change however much the end result if you use a flour "stronger" or less "strong". The first good resistance to mechanical stress leavening very long and extended, while the latter do not have this capacity and are therefore more suitable for products that require short leavening, or for sweets where you want to get a large friability (pastry, sponge Spain etc.. etc..).
