In southern Italy the term "Zita" indicates the bride, in fact this format is traditionally associated with weddings as an indispensable dish for wedding banquets.

Tradition has it that the Zita, characterized by an important thickness and roughness, is broken by hand into irregular parts, before being put in a pot for cooking.

The Zita Tagliata has already been reduced in its length for greater practicality of use in the kitchen.

This format can be used in the preparation of baked recipes or dry pasta seasoned with dense and colorful sauces, meat or fish, with vegetables or vegetables or with tasty cheeses such as pecorino, provolone or caciocavallo.
