Petra 5072 Più Vita is a type 0 soft wheat flour enriched with wheat germ stabilized through a heat treatment that preserves its qualities. With a W strength between 320 and 340, it is designed for medium and long maturation/fermentation. The toasted wheat germ content gives the dough superior softness and extensibility, making it easier to work without compromising its hold. The resulting pizza is tastier and flakier, even after cooling, avoiding a rubbery mouthfeel. The dough made with Più Vita adapts to any type of oven (wood, electric, gas), but best expresses its characteristics when cooked slowly at low temperature in an electric oven. This flour is ideal for the production of Roman-style pizza on the plate and pizza in pala, offering a high-quality dough that lends itself perfectly to cooking.
