Panuozzo Gragnano

Panuozzo, son of pizza and pizza masters of Gragnano, bread is a 50 cm long and is made from the pizza dough, baked in a wood oven rigorously. The cooking is done in two steps:
The first takes a few moments to allow the dough to be cut and filled, and the second, which takes about 2 minutes, takes place after the cutting and filling with all the ingredients to crank (like mozzarella and bacon) that should not be served raw. For the filling is usually employed a base of mozzarella
or provolone, enriched by other companatici as meats and / or vegetables and mushrooms. If necessary it can give the Panuozzo a touch slightly picante, through the use of chili, or salami flavored.
