Semolina deriving from a mixture of Italian and EU durum wheat of certified origin selected specifically for the type of finished product indicated. The qualitative standards of the selection and grinding process guarantee an adequate treatment of proteins and starches and allow to obtain a docile and performing semolina in processing.

Productions indicated: making focaccia and pizza in pan, bread and leavened dough, flat pizza and pastry products. Ideal for medium and long leavening leavened doughs to which it ensures excellent fragrance on the palate, stability and crunchiness of the structure, perfect holding of the dough in the long life, color and taste of the finished products.

How to use: mixes and processes indicated are those with direct refrigerated control method with brewer's yeast, indirect method with brewer's yeast or mother yeast. The best potential of the product is expressed with indirect doughs.
