Castrum Rosso DOP from Antica Cantina San Severo is a wine that celebrates the historical roots and the winemaking passion of the area. It takes its name from "Castrum", the ancient medieval settlement that marked the origins of San Severo. This wine is obtained from a skilful blend of Montepulciano (80%) and Sangiovese (20%) grapes, grown in the countryside of San Severo, Puglia. Organoleptic Characteristics: Colour: Ruby red, lively and brilliant. Bouquet: Intense fruity aromas of small black and red berries, plums and black cherries, enriched by spicy and floral nuances, with notes of violet and cyclamen. Taste: On the palate it is rightly tannic, full and velvety, with a balanced body that envelops the senses. Vinification: The grapes, carefully selected during the harvest, undergo maceration at a controlled temperature. The wine matures in steel silos for about 8 months and is further refined in the bottle for 3 months, thus achieving a perfect balance between freshness and complexity. Food Pairings: Castrum pairs perfectly with meat dishes such as arrosticini, braised meats and game. It is also an excellent companion for lasagna and fresh pasta with tomato-based sauces.
