Paccheri Rigati Pasta di Gragnano PGI from Fabbrica della Pasta is a very well-known and appreciated short pasta format. They originate from a particular Gragnanese anecdote from the 19th century: children collected the trifles (the remains of pasta that fell while drying in the street). Sometimes, someone tried to keep these wastes for themselves, but the factory owner, realizing what had happened, punished them with a loud slap, called "pacchero" in Neapolitan dialect.
