Petra 0009 is a professional gluten-free pizza mix developed by Molino Quaglia to create soft, extensible and easy-to-handle pizza dough.
Its carefully balanced formula combines gluten-free wheat starch, rice flour, corn starch and psyllium fibre to provide high water absorption and excellent dough workability, even during extended fermentation.
