Panforte comes from an ancient Sienese dessert called "panmelato". The original recipe was embellished when the "speziali", ancient pharmacists, added precious spices from the East. Then in 1879 the pharmacist Galgano Parenti, owner of one of the main panforte manufacturing companies who later joined the Sapori family, created a new version of panforte and dedicated it to Queen Margherita of Savoy, who was visiting Siena for the August Palio. Today, as then, whole sweet almonds, orange peel, melon, candied citron come together to create a unique dough, always hand-rolled to guarantee all the authenticity of the taste.
