Piedirosso Sannio D.O.P. VIGNOLÈ from Vinicola del Sannio is a fine red wine made from 100% Piedirosso grapes, a native vine from Campania. Grown in cool, tuffaceous soil in the province of Benevento, this wine takes its name from the characteristic resemblance of the berry stalk to a dove’s foot, hence the term “per e palummo”. Winemaking Technique: The grapes are harvested in the third ten days of September, when they reach full ripeness. Fermentation with maceration takes place at a controlled temperature of 17-18°C for approximately 7-8 days, followed by fermentation in a tank. Organoleptic Characteristics: Visual Examination: Intense red. Olfactory Examination: Aromas of ripe red fruit. Gustatory Examination: Soft and fruity body, with a balanced taste. Food Pairings: This fresh and fruity wine is perfect with baked dishes, grilled chicken, mild cheeses, and pairs beautifully with poached octopus or fish soup. With an alcohol content of 12% and served at 14°C, Piedirosso VIGNOLÈ is an excellent choice for rich and tasty dishes. Available in 75cl format.
