Super Diastatic is a liquid malt extract in paste form, composed mainly of complex sugars. Completely soluble and free of fiber, it represents the most versatile malt. It is ideal for leavened products, indirect doughs and long leavening times, guaranteeing excellent results in terms of development, softness, color and aroma. Rich in complex sugars, rich in active enzymes and completely soluble. Recommended dose: from 0.5% to 3.5% of the weight of the flour used. Approximately 12,000 Pollak units. Rich in sugars, proteolytic enzymes and completely soluble.
