Piedirosso Campi Flegrei Per'è Palummo D.O.P. Rosso delle Cantine Astroni is an authentic and unique expression of the volcanic terroir of the province of Naples. This wine is produced exclusively with Piedirosso grapes, a native Campanian vine known for its characteristic red stalk, reminiscent of a pigeon's leg, from which the name "Per 'e Palummo" derives. Characteristics of the Wine: Grape Variety: 100% Piedirosso Production Area: Camaldoli - Astroni, located at 230-300 m.a.s.l. on a sandy-loam soil of tuffaceous matrix. Harvest Period: Third ten days of October, with manual harvesting to ensure maximum care in the selection of the grapes. Vinification: Maceration with delestage and fermentation in steel for two weeks at a controlled temperature of 22°-26°C. The refinement takes place “sur lies” in steel and then in the bottle, to enhance the organoleptic characteristics of the grape variety. Organoleptic Characteristics: Color: Intense red with reflections that recall the volcanic nuances of the original soil. Bouquet: The nose reveals fruity hints typical of Piedirosso, accompanied by mineral and volcanic notes, distinctive characteristics of Campi Flegrei. Taste: On the palate, the wine is fresh and harmonious, with an elegant body and well-balanced tannins. The finish is long, with a light sapidity that recalls the volcanic origin of the soil. Food Pairings: Piedirosso Campi Flegrei Per'è Palummo pairs perfectly with traditional Neapolitan dishes, such as baked pasta, Neapolitan ragù, white meats and semi-mature cheeses. It is a wine that also lends itself well to being tasted alone, to fully appreciate its complexity and elegance.
