PETRA 6305 Manitoba flour from Molino Quaglia is a high-strength "00" type soft wheat flour, with a W index between 390 and 420. This flour is ideal for preparing both sweet and savoury leavened baked goods, such as panettone, pandoro, colomba and baguette. Thanks to its high liquid absorption capacity and dough stability, it is particularly suitable for pre-doughs such as bigas and poolish. The flour is free of additives and is packaged in 12.5 kg bags.
