Giallo d'Arles Greco di Tufo DOCG by Quintodecimo is an intense and refined expression of the Greco di Tufo grape variety, characterised by an ancient yellow-gold colour and a structure reminiscent of a red wine. Produced with selected grapes from the Giallo d'Arles vineyard in Tufo, this wine stands out for its deep minerality, combined with notes of apricot and quince jam. Ideal with fish dishes, vegetable risottos, and savory pies. Serve at 10-12°C. Organoleptic characteristics: The ancient yellow-gold colour, typical of the denomination, is made even more intense by the short stay, during fermentation, in small oak barrels and by the complete absence of clarification interventions. It is a white wine with the structure of a red, powerful and refined, characterised by a deep minerality fused with notes of apricot and quince jam and a full and fresh taste. After a long pressing of the whole bunches, the free-running must, rigorously protected from oxygen, is separated from the pressed must and clarified by natural sedimentation. Fermentation takes place 70% in stainless steel vats and 30% in new oak barrels. This is followed by an eight-month period of elevage on fine lees regularly resuspended in the wine.
