Our beloved pacchetelle have ancient origins: every year, in fact, in the courtyards and farms of the whole South Italy there was the processing of tomato preserves.
A real event, that of making "butteglie", as we used to say, that gathered whole families and saw different generations at work, side by side, with solidarity.
All this was not a burden for the family, indeed, it was a highly anticipated event: similar to a party.
There were those who washed tomatoes, who bottles (we used those of beer, a true example of "useful recycling"), who cut the tomatoes - which, at that time, were strictly San Marzano - to "pacchetelle": cut from the long side into 4 cloves, to make it easier to insert them into the bottle.
After cutting the San Marzano "a pacchetelle", you put the juice and a nice leaf of basil, you screwed the pots with new caps, after which they were left to boil in large cauldrons for about 15 minutes.
During this work there was water everywhere, the smell of tomatoes and we talked a lot.
It was nice to see the wrinkled hands of the older people who wisely washed the tomatoes; the dirty children of tomato, which they ate so naturally, without seasoning, were so tasty.
Naturally, then, we also ate bread and tomatoes. In the case of advanced tomatoes, what better use if not a nice "sciuè sciuè" spaghetti?
Every family had its own rituals, its own way of making bottles: this is that of Gustarosso.
Ingredients: Filet tomato with peel, tomato juice, salt.
Suggested preparations: spaghetti with "sciuè sciuè" tomato and basil parcels; pugliese focaccia with tomato pacchetelle; tomato pizza and enriched with pacchetelle.
