The santarosa is the sweet that can be said to be the ancestor of the puff. The puff pastry, cake typical Neapolitan born and well-known fact (albeit with a different name: santarosa), as was often the case for so many Neapolitan cakes, was born in a monastery: the Santa Rosa (hence the name), on the Amalfi Coast, between Furore and Conca dei Marini. In that place, we devoted a lot reserved for prayer, study and manual labor, the little remaining free time, (the nuns could not intrattener relations with the outside world ...) was spent in the kitchen, administered in a regime of strict autarky: the nuns had their own gardens and their vineyards, to minimize contact with the outside world, and enhance, through prayer, those with the Lord.
It so happened that one day long ago (we are in 1600) the sister officer noticed that the kitchen was advanced in a pan a little 'semolina cooked in milk, prepared for a toothless old nun; throw it would be a sacrilege. It was thus that, as inspired from heaven, they will cook stuck his sister a couple of eggs, two or three tablespoons of ricotta, a bit 'of crushed nuts, sugar and lemon liqueur. "It could be a filling," he said to himself. But put in to what? The fantasy was missing and immediately solved the problem: prepared with eggs and flour two sheets of dough he added lard and white wine, and settled there in the middle of the stuffing. Then, to satisfy his aesthetic taste, a little raised 'the pastry top, gave it the form of a cap of monaco, and baked the whole. When cooked, garnish the cake with a cordon of candied cherries and custard. The Mother Superior, who was first Ammanniti sweet at first sniffed it, and immediately after (are not upper Mothers vain sniffed !...) or if the deal: with that invention blessed (and especially tasty ,) one could do good both to the farmers of the area, the speaker of the convent.
